Are we one step closer to the end? One step closer to normal? Honestly I don’t know at this point. I have the lyrics from Linkin Park “One Step Closer” looping in my head. Specifically “I cannot take this anymore..” and “Cause I’m one step closer to the edge, I’m about to break”. Yeah, I know, we’re all ready for this to be over.
The minor flooding still continues out here in western Washington County. I was riding out near Cherry Grove and the South Rd area this weekend and there were signs of recent road repair to a couple of the gravel sections. Lots of trees and limbs down too.
Mia and I finally got Clifford the Big Red Van back this week too. Gas tanks were backordered for a bit so it took longer than we would have liked. Thank God this wasn’t during the summer when we would have several trips planned. Also we’ve now made 5 payments on Clifford and only had him in our actual possession for a whopping 24 days. Have I ever told you how much I hate thieves?!
A little inspiration
So Mia and I love The Great British Bake Off and just churned through the latest season on Netflix. I’ve been smitten with several of the challenges this year. Particularly the Coffee Walnut Whirls and making a Battenberg cake. Then there was the Crepe Cake challenge.
I did a little Google-foo and quickly found some local bakers who make crepe cakes. One of them was La Rose Patisserie which is not far from my office. Picked up a piece on Saturday for “research”.
This of course sent me down the rabbit hole of recipe research. I found a fairly simple one that I thought I would give a shot.
To continue on in the vein of The Great British Bake Off….I feel like the final product could fall into one of Laura’s submissions from this past season. The finished product is quite lacking in presentation but for sure makes up for it in taste.
I really should have used a cheesecake pan or a deep cake pan to keep the cake even as I built up the cake. As layer upon layer of cake took shape so did a very distinct slide/tilt to one side. If I had a deep pan I believe I could have eliminated that concern. I also think I would pipe the cream cheese next time instead of spreading it with an offset spatula.
