COVID-19 Wk 29: Karma Man!

You’d think the biggest news this week would have been the Presidential debate between Biden and Trump. However it turns out that the Chief Liar coming down with COVID stole the headlines. I would never wish anyone a life threatening illness……but if anyone in this world deserves to get COVID and experience severe symptoms it’s the man who knew how bad it was going to be and lied to the American people about it. Total douchebag! Karma is a bitch.

The adventure and exploring part of our lives has taken a bit of a back seat lately. With wildfires and COVID shutting down a lot of the places or things we’d like to do we’ve been sticking close to home lately.

For me personally Halloween is like Christmas is to some people. Last year we added the werewolf, this year we picked up the skeleton to his right. Still a few more things to set up over the next few days.

I’m still not sure I want to hand out candy this year. I’ll have to really think about it over the next few weeks.

Since we’ve been sticking around the house it was a good week for recipe testing. Mia picked out this egg in a hole sandwich from the Half Baked Harvest Super Simple cookbook. I’d love to link the recipe but I cannot find it on her website. So you’ll have to go get the book if you want to make it yourself. Powell’s has it and of course you can always check out your local library.

I also decided to stay on the doughnut trend from last week. I stuck with King Arthur and made their Apple Cider Doughnuts. Again they came out fantastic just like the pumpkin doughnuts!

And then Mia made this Cinnamon Swirl Apple Bread from Once Upon a Chef. It has to set overnight so we haven’t cut into it just yet.

I’m taking a bunch of the doughnuts to work tomorrow. Should make my coworkers happy.

I’ll say it again. Fall is here! Apples, pumpkins, Halloween! Riding and hiking this time of year is awesome too.
